Seafood, legumes, olive oil, tomatoes and pasta are all important in Italian food. So are garlic, sausages, cheese, rice, chilies, onions, vegetables and mushrooms. This recipe gives a nice taste of Italy and only requires two types of seafood.
Ingredients
- 2 pounds halibut-cut into pieces for the stew
- 1 small tin tomato paste
- 3 tbs garlic infused olive oil
- 1 tbs butter
- 6 fl ozs (150ml) white wine
- 2 medium sized onions-finely chopped
- 1 red bell pepper-chopped
- 3 ribs(stalks) celery
- 3 cloves garlic
- 2 ozs anchovies
- 2 tbs balsamic vinegar
- ½ tsp basil
- ½ tsp oregano
- ½ tsp black pepper
- Heat the olive oil in a saucepan on low heat.
- Add the butter.
- Add the onion and bell pepper, sprinkling salt in the pot as you add them. Cook until the onions are clear.
- Add the sliced garlic and anchovies. Allow them to cook for a minute.
- Add the vinegar.
- Add the celery, oregano, basil and black pepper.
- Add the tomato paste, cover and allow it to simmer for fifteen minutes.
- Whenever it starts to get too thick, add some of the wine.
- Add the halibut.
- When the fish is cooked and the stew has the desired consistency, turn it off and serve hot, with garlic bread.
